Lemon Vinaigrette Dressing

A lemony vinaigrette that can be used on various salads. Its got a little punch from the lemon to lighten up any meal.

Ingredients
  

  • 1/2 cup champagnevinegar
  • 1/4 cup Olive oil
  • 1 1/2 tbsp shallots, chopped
  • 1 clove garlic, chopped
  • 1 tsp fresh Thyme
  • 1 1/2 tsp lemon juice
  • 1/2 tsp lemon zest
  • 3/4 tbsp dijon mustard
  • 1 tsp salt
  • 1/2 tsp fresh cracked pepper

Equipment

  • Measuring cups/spoons
  • Mason Jar
  • Mini blender or stick blender
  • Chef's knife
  • Cutting board

Method
 

  1. Combine all ingredients into a mini blender and pulse until smooth. Store in mason jar, good for about 1 week when stored in refrigerator.
