Homemade Granola

Easy large batch granola recipe utilizing nuts, grains, and maple syrup. Perfect on yogurt, smoothies, etc.

Ingredients
  

  • 2 cups old fashioned oats
  • 1 cup puffed quinoa
  • 1 cup unsalted cashews
  • 1 cup unsalted pepitas
  • 1 cup unsalted almonds rough chop
  • 1 cup unsalted walnuts rough chop
  • 1 cup unsalted pecans rough chop
  • 1/2 cup unsalted sunflower seeds
  • 1 tsp cinnamon
  • 1/3 cup canola oil
  • 1/2 cup maple syrup
  • 2 tsp vanilla extract
  • 1/2 tsp salt

Equipment

  • 1-2 sheet pans
  • 1 large mixing bowl

Method
 

  1. Heat oven to 325 degrees F.
  2. Begin by measuring out dry ingredients (oats, puffed quinoa, nuts, cinnamon, salt) into a large bowl.
  3. Add in wet ingredients (canola oil, maple syrup, and vanilla extract) into dry ingredients. Mix to coat dry ingredients.
  4. Place granola on a baking sheet.
  5. Bake for 20 minutes, then using a spatula slip the granola to brown the other side. Bake for an additional 10-15 minutes until fragrant.
  6. Remove from oven and let cool on baking sheet.
  7. Store in large plastic bag or mason jar on the counter, pantry, etc.
  8. Store in the freezer for up to 3 months.
