
Sheet Pan Fajitas

Tacos – one of humanity’s greatest foods! I love all forms and create all different kinds. One of my favorite creations is this weeknight sheet pan fajitas recipe. It is super simple, quick, and tasty! It utilizes already-cooked chicken and black beans; you can use either canned or freshly cooked. Typically, I use canned, as I am always trying to prepare a healthy meal for my family quickly.
I remember the first time I had fajitas…..it was at Apple Bee’s as a starving teenager, and it was brought out on a sizzling plate; I will never forget it when they brought it to me. The sounds, the smells, and how delicious it was. Maybe it was because I was so surprised by the sounds it was making when placed in front of me or how hungry I was as a teenager, but that moment stays with me. I became somewhat obsessed with fajitas and would order them everywhere! I guess this recipe stems from that experience.
Tips & Tricks
- Julienne your vegetables – cut into long, thin, uniform strips
- Add the chicken and black beans to the sheet pan right after the vegetables have started to brown. I have accidentally let the vegetables go too long and they ended up crunchy.
- Add a tiny bit more olive oil to the sheet pan when you add the shredded chicken and black beans, if needed
- Use tongs to mix everything.

- Tortilla warmer/folded towel

Method
- Preheat the oven to 375 degrees F
- Slice the red onion, and bell pepper into strips. Place all of the vegetables onto your sheet pan. Mix with your olive oil and taco/fajita seasoning mix.
- Place the sheet pan on the middle rack and roast for about 15-20 minutes. Once the vegetables have started to caramelize a little bit (brown slightly on the outsides), add the shredded chicken and black beans, mix into the mixture. Cook for another 5-10 minutes to thoroughly heat the chicken and beans.
- Remove from the oven and let cool. Heat your tortillas and gather all your accoutrements - sour cream, avocado, salsa, cilantro, etc. Heat those tortillas and enjoy!
