Dutch Baby

 

Imagine a big, puffed pancake, baked right in the oven. That’s what a Dutch Baby, or German pancake, looks like. It’s an easy breakfast and/or brunch centerpiece that can be paired with fruit, yogurt, maple syrup, etc. My son and I love making them together! We layer the ingredients in our Vitamix, mix for 8-10 minutes, then place the batter in a hot cast-iron skillet, and bake! 

There are a few tricks when making the batter, which are listed below in Tips & Tricks. Always use a short-walled cast-iron pan or skillet; I have tried using a taller one, and the Dutch baby did not rise properly.

Equipment:

  • Vitamix or blender
  • Measuring cups/spoons
  • Spatula
  • short-walled cast-iron skillet (2-inch is best)

 

Tips & Tricks:

  • Always use a 2-inch (short) walled cast-iron pan/skillet
  • Heat the short-walled cast-iron pan/skillet in the oven to 400 degrees Fahrenheit/205 degrees Celsius  
  • Layer the ingredients – wet, dry, wet, dry into the Vitamix or blender 
    • This helps everything mix, instead of having clumps 
  • Mix the batter in the Vitamix or blender on high for 3 minutes, then reduce the speed to medium/low until the cast-iron pan reaches 400 degrees Fahrenheit/205 degrees Celsius  
  • Melt the butter in the hot pan and immediately place the batter in the cast-iron pan, return to the hot oven

Dutch Baby

Delicious and super easy baked pancake. Great for breakfast or brunch! Pairs great with yogurt and berries.

Ingredients
  

  • 1 cup All purpose flour
  • 2 tbsp Granulated sugar
  • 1.5 tsp Vanilla
  • 4 eggs (room temperature)
  • 1 cup Milk
  • 2 tbsp butter

Method
 

  1. Heat the oven with a short-walled cast iron pan to 400 degrees F.
  2. Layer the milk, flour, sugar, vanilla, and eggs in a blender. Mix on high until it has doubled in size.
  3. With an oven mitt, remove the hot cast iron pan and melt the 2 tbsp of butter and coat the bottom of the pan. Pour the Dutch baby batter into the pan and return to the oven.
  4. Bake for 22-25 minutes.
  5. Remove from oven and enjoy with your favorite toppings!
